Prepare your vegetables, in a separate sauté pan on medium high heat add the mushrooms and let them sauté until golden brown, when done set them aside. In a large saucepan on medium high heat add your thinly sliced leek. Let the leek sweat and caramelize naturally. When this process is done add the dry arborio rice and let the grain cook dry to the pan cook while stirring until it turns a light golden color, this adds to the flavor of the dish. </div>

I then deglaze the pan with the white wine, stirring the risotto until the liquid dissolves, at this time I also add the salt free Italian seasoning. Once the liquid is dissolved I add vegetable broth cup by cup letting each cup of liquid dissolve while constantly stirring the rice. When I finally get down to the last couple of cups of broth I add the mushrooms, peas, and asparagus to the pan and again stir until the liquid dissolves. The end result is a creamy rich, flavorful vegetable risotto.</div>

I haven't posted on my food blog in awhile because I have been transiting to <a href="http://en.wikipedia.org/wiki/Veganism"><i>Veganism</i></a> and exploring a new lifestyle of eating a high carb, low fat, low sodium vegan diet.<br />

<span style="font-size: x-large;">T</span>he transition was easy for me, I simply removed myself from the equation, and thought about the animals, and the environment first. I then took a long look at the health benefits. My health is so valuable, because I suffer from Rheumatoid Arthritis.<br />

<span style="font-size: x-large;"> I </span>had not been eating pork or beef for upwards of 15 years. I was consuming poultry, fish, eggs, and dairy and finding that no matter what I did my weight always fluctuated, and this was frustrating. I thought I was eating healthy. I was watching my calories, and working out like a crazy lady, but I wasn't seeing the results I wanted.<br />

<span style="font-size: x-large;">O</span>ne day after lots of research I dedicated myself to eating Vegan for the rest of my life, it was as simple as that, I have been completely Vegan now for two months and no longer counting my calories. Here is a yummy, healthy, <a href="http://en.wikipedia.org/wiki/Vegetarian"><i>vegetarian</i></a> meal that is very easy to make and will please even the pickiest of eaters. <br />
<br />
<span style="font-size: large;">Ingredients</span><br />

1 package of firm tofu, cubed<br />
1 large package of Asian ramen noodles (cooked according to package)<br />
4 cups of shredded cabbage<br />
4 carrots, cut into thin strips<br />
(I used rainbow carrots, thats why they look red in the picture)<br />
2 green onions, sliced<br />
1 large bunch of snow peas, cut in half<br />
1/2 cup soy sauce<br />
2 cloves of garlic, minced<br />
1 tsp of minced ginger<br />
1 Tbsp of honey<br />

<span style="font-size: large;">Directions</span><br />
<br />
Cook your ramen according to package, toss with a little bit of sesame oil, so the noodles don't stick together. Set your noodles aside. In order to get a crisp sears tofu you must dry it out a little. I cut my tofu into cubes and the pat it dry with paper towel to soak up the excess water it holds. I then season and sear the tofu in sesame oil. When your tofu is golden brown transfer it to a separate bowl. Add your cooked noodles back to you heated pan, add your shredded cabbage, green onions, snow peas,<br />
and carrots. Toss your noodle and veggie mix, your noodles will start to get crispy, which is good.<br />
In a small bowl add your soy sauce, garlic, ginger, and honey and mix well. Add this sauce to your noodle mixture and let cook for another 7 to 10 minutes. Add back your tofu and cook for another two minutes. Serve warm.<br />

<span style="font-size: x-large;"> I</span>'ve been thinking that I really want to go vegetarian but my love of fish holds me back.<i> <a href="http://en.wikipedia.org/wiki/Quinoa">Quinoa</a></i> is a great source of protein. In fact quinoa is complete protein containing all nine essential amino sources. Its high in iron, fiber, and lysine. Along with riboflavin, and magnesium<br />
which is a powerful antioxidant. Here is a recipe that just came to mind while thinking of other non meat protein sources.<br />

<span style="font-size: large;">Ingredients for Meatballs </span><br />

1 pound of lean ground turkey<br />
1 cup of grated parmesan cheese<br />
2 tbsp of Italian seasoning<br />
1/2 cup of fresh pesto<br />
2 cups of cooked quinoa<br />

<span style="font-size: large;">Directions </span><br />
<br />
Cook quinoa according to package, mix with the remaining ingredients in a large bowl. Hand roll each meat ball and place in a medium high heat pan and let brown on each side of ball until throughly cooked. No oil is needed in pan due to the pesto in the meat mixture. When the meatballs are throughly cooked place them on folded paper towels to let the oil drain off of them. Serve the meatballs over pasta with red sauce, top with parmesan and fresh basil.<br />

<span style="font-size: x-large;">I</span>t's a new year and a new way of eating for me. After juice fasting for <b>10 days</b> thick fattening foods just do not appeal to me or my tummy. I plan on juice fasting at least once a month, it's such a refreshing feeling! Here is a light but full of flavor<i> <a href="http://en.wikipedia.org/wiki/Scallops">scallop</a> </i>dish that is easy and quick.<br />

<span style="font-size: large;"><b>Ingredients </b></span><br />

1.5 pounds of fresh jumbo sea scallops, sliced in half<br />
1 tbs. olive oil<br />
Seasoning salt of any kind, I use a small amount of lemon pepper<br />
1 box of herb or plain cous cous, cook according to directions on box<br />
2 large pink grapefruits, cut into wedges<br />
Fresh spinach or arugula<br />
Champagne Vinaigrette<br />

<b><span style="font-size: large;">Directions</span></b><br />
<br />
Make your cous cous according to the directions on the the box. Set aside. Cut your grapefruit into clean wedges as shown. Cut your scallops in half, pat them dry with paper towel. Dry scallops sear up beautifully. Wet scallops just boil in their own juices. Once your scallops are dry add olive oil to a hot pan. Drop your scallops in carefully. A hot pan is also key to a nice sear on your scallops. Let your scallops cook 3 minutes on each side, lightly dust with seasoning salt. Turn your heat down to medium and drizzle your scallops with a couple of tablespoons of the Champagne Vinaigrette. Let them caramelize up for another 2 minutes. Or until your scallops are done, they should be opaque when finished cooking. Remove scallops from pan. Assemble your pate with greens, cous cous, and scallops. Garnish with the grapefruit wedges. Drizzle the dish with the left over vinaigrette.<br />

2 tsp of Dijon mustard<br />
1/4 cup of champagne vinegar<br />
3/4 cup of olive oil<br />
1/2 tsp salt<br />

In a small bowl combine Champagne vinegar and mustard whisk together, while whisking slowly drizzle in olive oil. Season with salt and pepper.<br />

<span style="font-size: x-large;">T</span>oday was my last day of the fast! Tomorrow and onwards I will be juicing breakfast and lunch and then have a healthy solid food dinner. I love juicing and will for the rest of my days be a juicer! I received my <b>10 day</b> juicer badge today! I will be honest I am so excited to actually eat and chew food! Oddly, I am craving peanut butter, nuts, and steamed broccoli??? I am on <b>Day 9 </b>today. I have passed my goal of how much I wanted to loose in weight and do not want to loose anymore. Which was 10 pounds! :) Fearing that I will loose some of my muscle mass that I have worked so hard to get. I am a total gym rat and working out being fit and healthy means so much to me. I just do not have the energy to get me through the workouts I am used to doing. I crave those workouts and can't fathom stopping or slowing them. I am still going to juice my breakfast and lunch and eat a healthy more vegan plant based dinner. I actually plan on juicing for the rest of my days. <span style="font-size: x-large;">Y</span>es, finally a great day! I had energy, I worked out twice and I was never terribly hungry. I will be honest it is hard to make the rest of my family dinner, and to pack my daughters lunch. Willpower!! Although, I did make snack juice pops and they were delicious. My lunch juice was a total fail, I do not recommend making it. It was hard to get down and I reeked of garlic the rest of the day, Not good. But other than that today was a great day, I think I can do this... on to <b>Day 9</b>!!<br />

<span style="font-size: x-large;">F</span>ocus, focus, focus, I can do this!! <b>Day 6 </b>is done and I really do feel amazing. I have tons of energy, I made it to the gym today and sweated buckets. When I started this cleanse Jan1st, I weighed 145 today I weigh 137 I have lost 8 pounds, I am only two pounds away from a goal weight I have been trying to reach for years. <span style="font-size: x-large;">I </span>feel a huge sense of achievement today, I made it to <b>Day 5 </b>and survived! A group of super nice people on facebook are also doing this fast/cleanse they call it Juiceuary. Juiceuary, meaning we juice the whole month of January. The group was started by a single father from New York Steven Robalino and they have been doing this for a couple of years. It's nice to have some support from all over the world during those dark times. I had a couple of those dark moments today like ...what the heck am I doing?? Am I crazy?? I haven't eaten in 5 days!!! They pass, the day goes on and before you know it, it's <b>Day 6</b>. Only 26 more days to go!<br />

<span style="font-size: x-large;">A</span>chievement, yes I made it through day 4! I had a lot of energy this morning, went to the gym and was killed by my personal trainer. Today my PT and I did mostly weights followed up with a 4 mile run. It felt great. I didn't have any hunger pains until later this evening while watching T.V. and every other commercial is about food... water, water, and more water!!! It is super important to drink lots of water while fasting/cleansing. Hot water with lemon is also a favorite, especially in the winter. I'm a little excited for bed and to get on with <b>Day 5!! </b><br />

<span style="font-size: x-large;">D</span>ay three is almost done and I couldn't be happier. I've heard this cleanse is supposed to be smooth sailing from here. I woke up this morning without a headache and without my tummy growling, which is great. The only odd thing I experienced today was that my urine was bright pink!! Yup, I believe it's from the beets I juiced. I looked it up and it seems to be totally normal. I even made it to the gym today and had lots of energy. I plan on working out during this fast, I can't miss a workout. I love the gym.<br />

<span style="font-size: x-large;">T</span>he only obstacle that came my way today was picking up dinner, takeout sushi for my family and watching them devour it in front of me. I was strong, very strong! I did enjoy my dinner juice though, it was tasty although it didn't look it. :)<br />

I always thought of myself as a healthy person. I exercise regularly and eat fairly well. Although I will be honest food has always been my weakness. I love food and I love to eat it. After being immobile for a couple of months due to my RA I gained about 16 pounds and was miserable. I finally got medication figured out for this painful disease and was back in the gym, thank goodness! My medications are extremely toxic and I knew I had to get off of them as soon as possible! I knew deep down inside my diet had to change, and that the foods I love and have such an addiction for were slowly killing me.<br />

<span style="font-size: x-large;">I</span> had heard of juicing and was very curious, after doing a little research I went and purchased my beloved juicer. I picked the <a href="http://www.brevilleusa.com/beverages/juicers/juice-fountain-plus-je98xl.html">Breville J</a><a href="http://www.brevilleusa.com/beverages/juicers/juice-fountain-plus-je98xl.html">uice Fountain Plus</a>. It's been great so far, and easy to clean!<br />

It all boils down to this your body needs fresh fruit and vegetables on a daily basis instead of white, packaged, over processed foods. Juicing is the only way to get a lot of fruits and vegetables into you fast in it's raw state. A great documentary on juicing to watch is... <a href="http://www.fatsickandnearlydead.com/">Fat, Sick, and Nearly Dead</a>. The movie is only an hour and 30 minutes and is about two men who are over weight with autoimmune disease and how juicing changes their lives.<br />

<span style="font-size: x-large;">I</span> plan on documenting my journey here on my food blog I hope you all will follow me and maybe be inspired to make the change in your diet. I am already on day two of my fast and let me tell you it's not that easy. I'm hungry, tired, irritable, and have a pounding headache. My body is definitely detoxifying. I woke up last night dripping with sweat. Ewwww, I know! I hear the first 3 days are the worst and after that it's smooth sailing. Lets hope! It's not that I'm starving, it's that eating is so social and comforting. I keep telling myself is that tomorrow is day three, Here's to day three!! <br />

1/2 cup (1 stick) plus 6 tbsp butter, softened<br />
3/4 cup of firmly packed brown sugar<br />
1/2 cup of granulated sugar<br />
2 eggs<br />
1 teaspoon vanilla<br />

1 1/2 cups of all purpose flour<br />
1 teaspoon baking soda<br />
1 teaspoon ground cinnamon<br />
1/2 teaspoon of kosher salt (I like to taste the salt in my cookies)<br />
3 cups of Old fashioned Quaker Oats (uncooked)<br />
1 cup of Craisins (not a raisin fan)<br />

<span style="font-size: large;"><i><b>Directions</b></i></span><br />

Heat oven to 350˙. In a large bowl, beat butter and sugars on medium in a electric mixer until creamy. Add eggs one by one and vanilla, beat well. In a separate bowl add flour, baking soda, cinnamon, and salt. Mix and slowly add to the wet ingredients. Add oats and Crasins, mix well. Drop dough by tablespoon onto un-greased cookie sheets. Bake for 8 to 10 minutes or until golden brown. Make about 4 dozen cookies.<br />

Mix all together in a large bowl and refrigerate for 1 hour. Roll or press into small bite size balls. The batter will be a little crumbly. Keep refrigerated. These balls are also yummy with sunflower seeds, cranberries, or other dried fruit.<br />

<span style="font-size: x-large;">A</span>fter nearly taking a year off of blogging I am back! I really missed my food blog and I am going to try my hardest to keep posting clean and healthy recipes. Fall is here and warm comforting foods are in order. Here is a family favorite, healthy homemade <i><a href="http://en.wikipedia.org/wiki/Chicken_noodle_soup">Chicken Noodle Soup</a>. </i><br />

<span style="font-size: large;"><i><b>Ingredients</b></i></span><br />

1 package of fresh linguini pasta<br />
2 32oz containers of chicken broth <br />
3 cups of chopped rotisserie chicken<br />
4 whole carrots chopped<br />
4 celery stalks chopped<br />
1/2 of a yellow onion chopped<br />
4 cloves of garlic minced<br />
5 mini white potatoes, quartered<br />
2 Tbs. pre made basil pesto<br />
Fresh Tarragon and Marjoram (add as much as you would like)<br />
Salt and pepper to taste<br />

<span style="font-size: large;"><i><b>Directions</b></i></span><br />

Chop up all of your vegetables and toss them into a large soup pot. Add the basil pesto to the vegetables and let them simmer for 5 minutes at medium heat to soften them up a bit. Add your chicken stock at this time along with your chopped chicken and your fresh herbs, salt and pepper. Let your soup simmer at med high heat covered for at least one full hour. At the very last minute add your fresh pasta to your soup and bring to a boil, just long enough to cook your pasta. Serve hot with a crusty bread.<br />

fresh whole wheat cheese filled Tortellini Pasta, family size<br />

Cook your tortellini till it is al dente, about 3 to 4 minutes once your water comes to a rapid boil. It is very important to not over cook your pasta, because then your salad is soggy. Drain your pasta and place in a large bowl. Add to you pasta all of your chopped vegetables, olives and cheese. The oil from your chopped peppers and artichokes make a nice natural dressing. There is no need to add more oil. Add your feta, toss and serve. This salad is delicious warm or cold.<br />

12 oz. Orzo<br />
1 bunch of fresh asparagus, cut into 1" pieces<br />
1 pint of cherry tomatoes, sliced in half<br />
1 lemon, zest and juiced<br />
4 Tbs. olive oil<br />
2 cloves of garlic, minced<br />
2 Tbs. fresh parsley, minced<br />
1 cup of freshly grated parmesan<br />
kosher salt and pepper<br />

I make this dish at least twice a month in the winter. We are only a family of three but I always roast two birds for leftovers. As for the mashed potatoes, I am the queen of potatoes. I could live off them, so you know my mashed potatoes are the best, YUM!<br />
<br />
<br />
<b><span class="Apple-style-span" style="font-size: large;">•Herb Roasted Chicken• </span></b><br />
<br />
<span class="Apple-style-span" style="font-size: large;"><span class="Apple-style-span" style="font-family: Verdana, sans-serif;"><i>Ingredients</i></span> </span><br />

2 fresh whole chickens<br />
1 stick of butter, softened<br />
1 bunch of fresh rosemary, chopped<br />
1 bunch of fresh sage, chopped<br />
1 bunch of thyme, chopped<br />
1 apple, quartered<br />
2 lemons cut in half<br />
1 yellow onion, quartered<br />
2 cups of dry white wine<br />
salt & pepper to taste<br />

I buy disposable foil pans big enough for one bird. This just makes clean up much easier! I always roast two birds so there are plenty of leftovers. Gather your herbs and chop all of them together. Loosen the chickens skin and place half of the chopped herbs under the skin of each chicken. Rub each bird with a half a stick of butter and sprinkle the rest of the chopped herbs over your chickens. Pour one cup of wine in each of the bottom of the foil tins. Chop two lemons in half place one of the chopped lemons inside the chicken cavity and the other chopped lemon in the foil tin. Quarter your onion and apple and place in the foil tin. Season your birds generously with salt and pepper. Cover your birds with foil and place both birds in a preheated 450˙oven. Bake your birds covered for 30 minutes. Remove the foil and continue to bake for another 45 minutes, basting now and then with the juices in the pan. Your chicken should be golden brown when finished cooking. Remove your chickens from the oven and transfer to a serving dish to let rest. Reserve one cup of the chicken drippings for your gravy.<br />

6 Russet potatoes, peeled and chopped<br />
2 quarts of chicken broth<br />
2 cups of sour cream<br />

Peel and chop your potatoes, place them in a large boiling pot. Add your chicken stock to the pot, your potatoes should be all the way covered by the broth. Boil your potatoes in the chicken broth, until completely tender. Drain about one cup of liquid off your potatoes and mash with one stick of butter and 2 cups of sour cream. Add salt and pepper to taste.<br />

Add the flour until the dough forms a stiff dough. Scrape the dough onto a large sheet of wax paper. Roll the dough until it forms a 12" rope that is 3/4" in diameter. Roll your dough rope up in the wax paper and refrigerate for 30 minutes. Remove your dough from the fried and let rest for 10 minutes at room temperature. Preheat the oven to 300˙. Unwrap and slice your dough into 1" slices, roll them into little balls and place them on an ungreased cookie sheet. Press your them into the center of each cookie ball, fill each hallow with 1/4 teaspoon of preserve. Bake your cookies until they are lightly browned, about 20 minutes. Remove from the oven and let them cool 5 minutes before taking them off the cookie sheet. </span></div>

Here is a lighter, healthier version of a family favorite, Turkey Meatloaf. This recipe is full of flavor and really satisfies that need for a warm and hearty meal.<br />

1 small yellow onion, chopped<br />
3 large cloves of garlic, chopped<br />
2 Tbs. olive oil<br />
Salt and pepper to taste<br />
1 tsp fresh thyme leaves<br />
2 Tbs. of Worcestershire sauce<br />
1/2 cup of chicken stock<br />
1 tsp tomato paste<br />
1 1/2 pounds of ground turkey<br />
1/2 cup of italian seasoned bread crumbs<br />
1 large egg, beaten<br />
1/2 cup of ketchup<br />

In a medium pan saute chopped onion, garlic, salt, pepper and thyme in olive oil on medium heat until translucent. Add chicken stock, worcestershire sauce and tomato paste, mix well. Allow to cool. Combine your ground turkey in a bowl with the bread crumbs and one egg. Add onion mixture to your ground turkey once cooled. Mix well. Add your seasoned turkey to a lightly greased loaf pan. Spread ketchup evenly over the top of your turkey loaf. Bake at 375˙ for 1 1/2 hours or until meatloaf is cooked through. Serve hot.<br />

In a large pot over medium heat add your oil and corn. Cover and slightly ajar the lid so the steam can escape. When the popping slows, remove pan from heat.</div>

1 cup of brown sugar<br />
1 stick of salted butter<br />
1/4 cup kayro syrup<br />
1/2 tsp baking soda<br />
4 qt. popped corn<br />

Combine first 3 ingredients in a saucepan, when these ingredients have melted stir once and let the mixture boil on medium heat for 3 minutes. Stir once while cooking. Remove the pan from the heat and stir in soda until foamy. Put your popped pop corn in a large brown paper bag that you have your groceries packed in at the grocery store. Pour the caramel syrup over the corn stir with a wooden spoon. Close the bag and place in the microwave for 1 1/2 min. Remove and shake closed bag vigorously. Pour your caramel corn on a cookie sheet covered in parchment paper to cool.<br />

I thought I would try this dish at home with tofu and brown rice and my family loved it. The next time I make this dish I might make it with scallops or shrimp.<br />

<br />
1 pound of firm tofu cut into cubes<br />
1 zucchini sliced and then the pieces cut in half<br />
3 carrots chopped<br />
2 cups of sugar pea pods<br />
Brown rice, cooked<br />
<br />
2 Tbs. white wine<br />
2 Tbs. soy sauce<br />
2 Tbs. sesame oil<br />
2 Tbs. cornstarch, dissolved in water<br />
1 Tbs. Sriracha, chili sauce<br />
1 tsp. distilled white vinegar<br />
2 tsp. brown sugar<br />
2 green onions, chopped<br />
2 Tbs. garlic, chopped<br />
1 handful of unsalted peanuts<br />

<b>Marinade:</b><br />
Combine, 1Tbs. wine, Tbs. soy sauce, 1Tbs. oil and 1Tbs. cornstarch and water mixture, mix together. Place tofu pieces in a large zip lock bag add marinade. Marinate for 30 minutes, then drain.<br />
<br />
Combine 1Tbs. wine, 1Tbs. soy sauce, 1Tbs. cornstarch/water mixture, 1Tbs. oil, chili paste, vinegar, and sugar in a bowl mix well. Add sauce to a medium high skillet add green onion, garlic, and peanuts heat sauce until it slightly thickens. In a separate skillet add a little bit of oil in a medium high pan sear your marinated tofu. Add your chopped vegetable and sauté for 2 to 3 minutes. Add the tofu and vegetables to your thickened sauce, mix well. Serve over brown rice.<br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes.<br />Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour.<br />Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. If you are limited on time sticking the whole bowl into a warm oven (200˙) works beautifully. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favorite pizza topping recipe.<br />Preheat oven to 425 degrees F (220 degrees C). If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it.<br />Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.</span></div>
